Smoked Wild Turkey
This simple recipe is a great alternative to roasting or broiling your turkey for Thanksgiving. Though it may take a bit longer to prepare, the wait is definitely worth it.
1 (12-pound) turkey
1/4 cup vegetable oil
1/4 cup dry red wine
1/3 cup fresh lemon juice
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 teaspoon marjoram
1 clove garlic, minced
Salt to taste
Pepper to taste
Rinse turkey in cold water. Mix oil and next 8 ingredients, Rub turkey inside and out with oil-wine mixture. Pour remaining mixture into a water pan, and fill with water. Smoke turkey for 8 to 12 hours, keeping pan filled with water.
Yield: 12 to 14 servings
